For the creamy Cajun shells
For finishing
Instructions
1
Cook the shells: Boil the pasta in generously salted water until just al dente. Reserve 1/2 cup pasta water, then drain.
2
Sear the steak: Pat the steak completely dry. Toss with Cajun seasoning, smoked paprika, garlic powder, onion powder, salt and pepper.
3
Heat the olive oil in a cast iron pan or skillet over medium-high heat. Add the steak in a single layer without overcrowding. Sear about 2 minutes, flip, then cook another 1-2 minutes.
4
During the final minute, add the butter and minced garlic and toss until the steak is glossy and coated. Transfer the steak to a plate.
5
Make the sauce: Lower the heat to medium. Melt 2 tablespoons butter in the same skillet and sauté the garlic about 30 seconds.
6
Pour in the heavy cream and season with Cajun seasoning and smoked paprika. Simmer gently for 2-3 minutes.
7
Reduce the heat and gradually stir in the Parmesan and mozzarella until the sauce is thick and silky.
8
Add the pasta shells and toss until every shell is coated. Add splashes of reserved pasta water until the sauce is glossy and flows easily between the shells.
9
Pile the garlic butter steak bites over the shells and spoon some sauce around them. Finish with Parmesan, parsley and cracked black pepper, plus red pepper flakes if desired.
