Instructions
Make the cheese sauce
1
Melt the butter in a large pot, then stir in the flour to make a roux with a soft consistency. Cook briefly to cook out the raw flour taste.
2
Add a little heavy cream and stir until smooth. Continue adding cream a bit at a time, stirring until smooth each time, to prevent lumps.
3
Finish with a little milk to balance the sauce.
4
Stir in a big handful of Velveeta until melted to create a creamy, cheesy base. Start cooking the pasta at this point.
5
Stir in the white Italian blend, then the triple cheddar blend, then the Havarti slices (broken up a bit at a time), letting each melt in layers. Do not boil the sauce, or it will turn gritty.
6
Season with garlic powder, onion powder, salt and fresh cracked pepper, and mix well.
Assemble and bake
7
Preheat the oven to 375°F.
8
Put the strained pasta in a large aluminum pan and pour the cheese sauce over it. Stir until everything is well coated.
9
Sprinkle in the medium cheddar and mix only slightly so big pieces of cheese remain for a good cheese pull.
10
Bake at 375°F for about 45 minutes. Serve hot.
Notes
Don't boil the cheese sauce, as this makes the mac and cheese gritty.
Leave some large pieces of cheddar in the mix for a nice cheese pull.
Add the cream and milk gradually to keep the sauce smooth.
